What is Unger in a meat grinder

When choosing a suitable meat grinder, buyers often look at the general characteristics, energy consumption, dimensions and more. But do not forget about the main part of the meat grinder - a knife. For a conventional apparatus of this kind, when used at home, a productivity of 30-50 kg per hour is enough, which will quickly prepare the necessary products. Fast food restaurants and other organizations of this type use a capacity of 150 kg / h. For enterprises, the indicator starts from 300 kg / h and higher.

Types of knives

There are several varieties of knives that are suitable for certain products:

  1. Standard type. It should be familiar to everyone, because it consists of a screw, a knife, a grill and a clamping nut. Such a set has any household meat grinder. Chopping meat into mincemeat is effective if the knife is sharpened periodically. It should be borne in mind that the minced meat is obtained large and some types of products will have to be ground again. The system is great for harvesting meat and other things at home, however, for enterprises and specialized institutions there are other meat grinders that can do their job more efficiently.
  2. Type Unger. This is a whole system consisting of an impressive set of knives. Assembly procedure: cutting and double-sided knives are mounted on the auger, then closed with a grill, for coarse cutting, after which another double-sided knife is mounted and the last grill is attached, for fine grinding. The design is fixed with a regular clamping nut. If you scroll through the products in such a meat grinder, you can get tender stuffing the first time. It is worth noting that the cost of such a set exceeds the cost of a conventional meat grinder of a standard type. This assembly is effective in enterprises and in special institutions (restaurants, cafes, fast food chains). To prevent the mincemeat from being too finely chopped, you should remove the third knife and a fine grill (semi-unger system).

Special operating instructions

For all mechanisms of this type, the rule applies: turn off the device if it is not currently in use. If not observed, the edges of the knife may become dull, and the mechanisms may become loose, which would violate the effectiveness of further work.

To extend the life of the meat grinder, you need to monitor the quality of its assembly (so that all parts fit snugly together), dry the mechanisms well after washing and clean and lubricate the drives at least once a year.
